Shrinking Nutrients And A Growing Problem
A growing body of evidence is pointing to a growing problem: nutrient loss in our food supply.
The increased use of chemicals by industry, dubious food-processing practices and unbalanced diets have started a chain reaction in the modern diet. The effects of these changes are being felt on the dinner tables of hundreds of millions of residents in North America. Alarming signs of the damage done are starting to appear everywhere. It is becoming enough of a problem that the United Nations Food and Agriculture Organization is calling for our foods to be fortified with nutrients. They state, "Food fortification is an essential element in nutrition strategies to eliminate micronutrient deficiencies. It is a dynamic area developing in response to the needs of population groups and industry."1
Where Have All The Nutrients Gone?
How has your diet deteriorated to such a point that authorities are calling for our food to be improved through artificial means? The causes are many and we are now only beginning to realize the true magnitude of the problem.
POPs (Persistent Organic Pollutants) are one source of nutrient degradation. These toxic substances disrupt ecosystems and can injure your health. According to Greenpeace, POPs travel long distances and become more concentrated as they move up the food chain. They are found in dangerous levels in people, plants and animals in every region of the globe.2 Where do POPs come from? Most POPs are products and / or by-products of industrial chlorine chemistry. Nearly 170 organochlorines (a type of POP) of industrial origin have been identified in human tissue. Even more frightening, over 11,000 organochlorines are currently in commerce throughout the world.3
In addition, a growing proportion of the food raised in this potentially-hazardous environment is being exposed to radiation. Irradiation, a relatively new and controversial form of food processing, is seeing increasing use as a means of eliminating insects and bacteria in produce and poultry. Besides the troubling specter of consuming food exposed to radioactive elements such as cobalt-60 and cesium-1374, there are other disturbing considerations. Critics of this process are concerned that irradiation reduces the nutritional value of our food and may introduce chemical changes which could have toxic side effects in your body.5
In addition to these external threats, many North Americans are not eating right and are not getting the exercise they need. The latest data from the third National Health and Nutrition Examination Survey (NHANES III), conducted from 1988-94 by the National Center for Health Statistics, indicates approximately 14% of children ages 6-11, 12% of young people ages 12-17, and 35% of adults ages 20 and over are overweight. The report points to diet and physical activity as the primary behaviors believed to be associated with weight problems. Calorie intake has increased since NHANES II in 1980 and recreational activity is lower for most Americans.6
